SW recipe: Chicken and cauliflower tikka

Ready in 1 hour, plus marinating / serves 4

Ingredients:

2 level tbsp tikka curry powder

5cm piece fresh root ginger, peeled and grated

4 garlic cloves, crushed

100g fat-free natural Greek yogurt

Juice of 1/2 lemon

1 tbsp tomato puree

500g skinless and boneless chicken thighs, visible fat removed

1 red onion, 1/2 cut into small wedges, 1/2 finely chopped

1 small cauliflower, broken into florets, reserving the leaves

400g can chickpeas, drained and rinsed

Low-calorie cooking spray

200g baby spinach

1 large cucumber, finely chopped

1 green chilli, deseeded and finely chopped

Juice of 2 limes

25g fresh coriander, leaves roughly chopped

Method:

1 Mix half the tikka powder. ginger and garlic with the yogurt, lemon juice and tomato puree in a wide bowl. Season, add the chicken and stir to coat. Cover and leave to marinate in the fridge for at least 30 minutes, or overnight.

2 When ready to cook, preheat your oven to 200°C/fan 180°C/gas 6. Put the onion wedges, cauliflower florets and chickpeas into a large, non-stick baking tin. Scatter over the remaining tikka powder, garlic and ginger. Stir to coat, then top with the chicken. Spray with low-calorie cooking spray and bake for 20 minutes.

3 Add the cauliflower leaves and return to the oven for 20 minutes. or until the chicken is cooked through and the veg are tender. Gently stir through the spinach and return to the oven for a final 2 minutes until it has wilted

4 Mix together the chopped onion, cucumber. chilli and lime juice. Season and stir through the coriander. Serve the tray bake with the cucumber salsa.
