Ingredients:

3 cooked skinless chicken breasts fillets, cubed
500g cartoon passata with basil
2 tbsp tomato puree
2 garlic cloves, crushed
2 x 200g bags spinach
2 courgettes, grated
4 spring onions, thinly sliced
100g ricotta
10 fresh basil leaves, shredded
A pinch of freshly greated nutmeg
Salt and freshly ground black pepper
10 dried lasagne sheets
1 level tbsp finely grated fresh parmesan
1 slice of day-old wholemeal bread from a small 400g loaf, whizzed in a food processor to make fine crumbs
Lettuce, cucumber, green pepper and spring onion salad dressed with lemon juice, to serve.

Method:

1) Mix together the chicken, passata, tomato puree and garlic.

2) Poke a couple of holes into the bags of spinach, then (one by one) sit each bag in the microwave-proof bowl and microwave on high for 3 minutes to wilt. When cool enough to handle, roughly chop the spinach and put in a bowl with the courgettes, spring onions, ricotta, basil and nutmeg. Season and mix well.

3) Spoon half of the chicken mixture into an A4 size baking dish, then top with half the lasagne, overlapping and breaking them to fit. Spread with half the spinach mixture. repeat the layers once more, then evenly sprinkle over the breadcrumbs and parmesan (if making in advance, chill at this point for up to 24 hours).

4) Preheat your oven to 200C/fan 180C/gas 6. Bake the lasagne for 35 minutes, or until bubbling and crisp on top. Divide between 4 plates and serve with the salad.
