Ready in 40 minutes
4 skinless and boneless chicken breasts, cut into thin strips
1 tbsp ground cumin
1 tsp ground cinnamon
¼ tsp allspice
¼ tsp cayenne pepper
Zest and juice of 1 lime, plus lime halves to serve
3 mixed peppers, deseeded and thinly sliced
1 courgette, cut into batons
1 red onion, cut into thin wedges
25g fresh coriander, leaves chopped, reserving some to serve
8 large eggs
1 red chilli, thinly sliced
1 Put the chicken in a large bowl with the spices, and lime zest and juice. Toss together to coat.
2 Spray a large, non-stick frying pan with Frylight and place over a medium-high heat. When hot, add the chicken and cook for 6-8 minutes, or until cooked through, turning often. Transfer to a bowl and set aside.
3 Wipe out the pan, spray with a little more Frylight and return to a medium-high heat. Add the peppers, courgette and onion, and cook for 3-4 minutes, or until just tender but still with a little bite. Add to the chicken, then add the coriander and toss together. Cover with foil to keep warm.
4 To make the wraps, lightly beat the eggs in a large measuring jug and season. Spray a medium, non-stick frying pan with Frylight and place over a medium-high heat. When hot, pour in a quarter of the eggs, tilting the pan to coat the base. Cook for 1 minute on each side, or until cooked through. Slide onto baking paper and cover with foil to keep warm while you repeat to make 3 more wraps.
5 Top the wraps with the chicken and veg. Scatter over the reserved coriander and the chilli, then roll up. Serve with the lime halves for squeezing over.
