SW recipe: Chicken, bacon and mushroom pasta

Ingredients

300g dried casarecce or penne pasta

100g frozen peas

Low-calorie cooking spray

2 skinless and boneless chicken breasts, thinly sliced

4 smoked bacon rashers, visible fat removed, cut into 1.5cm-thick strips

200g button mushrooms, halved

3 leeks, sliced

250g plain quark

Method

1 Cook the pasta according to the pack instructions, adding the peas for the last 2 minutes of cooking time. Drain well, then return to the pan.

2 Meanwhile, spray a large, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the chicken, bacon and mushrooms, season and stir-fry for 3-4 minutes, or until lightly browned.

3 Add the leeks and stir-fry for a further 3 minutes, or until the veg is tender and the chicken is cooked through. Remove from the heat and stir through the quark. Add the quark mixture to the pasta and toss to combine. Divide between 4 bowls and serve.
