SW recipe: Chicken chilli bowl

Ready in 50 minutes


Low-calorie cooking spray

2 red onions, finely chopped

3 garlic doves, crushed

1 tsp dried red chilli flakes

1 tsp ground cumin

1 tsp ground coriander

2 x 400g cans chopped tomatoes

4 cooked skinless and boneless chicken breasts (or 570g), shredded

100g dried basmati rice

400g can black beans, drained and rinsed

370g red or yellow baby vine tomatoes, quartered

2 tsp red wine vinegar

25g fresh flat-leaf parsley, leaves chopped

Mixed baby-leaf salad


1 Spray a large, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onions and stir-fry for 6 minutes. Add 2 garlic cloves, the chilli flakes, cumin and coriander with a splash of water Cook for 2-3 minutes. Add the canned tomatoes and 300m1 water, season, then simmer for 10 minutes. Stir through the chicken, cover and cook gently for 5-6 minutes. Reduce the heat to low and keep warm while you make the rice.

2 Cook the rice according to the pack instructions. Stir through the beans, then set aside for 5 minutes. Toss together the remaining garlic, the vine tomatoes and vinegar.

3 Stir the parsley through the chicken mixture, then bring to a simmer until the chicken is piping hot. Divide the rice between 4 bowls with the chicken, vine tomatoes and salad.

Top with freshly ground black pepper.
