SW recipe: Chicken curry noodle bowls

Serves 4 Syns per serving 2 *(curry only) Ready in 40 minutes

Ingredients:

Frylight

400-500g skinless and boneless chicken breasts, cut into chunks

5-6 shallots, thinly sliced

8cm-piece fresh root ginger, peeled and cut into fine matchsticks

1 litre hot chicken stock

3 tbsp mild or medium curry powder

350g diced fresh or frozen butternut squash and sweet potato

200ml reduced-fat coconut milk

125g fresh or frozen sugar snap peas, halved diagonally

250g dried medium egg noodles

225g can bamboo shoots, drained

80g fresh baby spinach, or frozen defrosted and the water squeezed out

Thai basil leaves, to serve (optional)

Lime wedges, to serve

Method:

1 Spray a large, non-stick frying pan or wok with Frylight and place over a medium heat. Add the chicken and cook until lightly browned all  over. Transfer to a plate and set aside. Add the shallots, ginger and 3 tbsp chicken stock to the pan or wok, and cook for 5 minutes, or until the shallots have softened. Add the curry powder, then reduce the heat to low and cook for 2 minutes, stirring, until fragrant. Add the squash and sweet potato, coconut milk and remaining stock, and simmer for 10 minutes.

2 Meanwhile, boil the sugar snap peas in a large saucepan for 2 minutes. Using a slotted spoon, transfer to a colander and refresh under cold water. Add the noodles to the hot water in the pan. Cook according to the pack instructions, then drain and keep warm.

3 Add the chicken and bamboo shoots to the curry, and bring back to the boil. Simmer for 4 minutes, add the sugar snap peas and spinach, cook for 1 minute and season. Divide the noodles and curry between 4 bowls. Scatter over the basil leaves (if using) and serve with the lime wedges for squeezing over.
