SW recipe: Chicken in a bowl with corn mash and slaw

Ingredients:

4 skinless and boneless chicken breasts, each cut Into 3 chunks

1 tsp Schwartz Perfect Shake Piri Piri

1 tsp ground cumin 1/3 tsp ground mace

1 tsp turmeric

75g self-raising flour

2 large eggs, lightly beaten

Low-calorie cooking spray

1kg floury potatoes, peeled and cut into large chunks

340g can sweetcorn, undrained

For the slaw:

1/2 red onion, thinly sliced

250g red cabbage, finely shredded

2 carrots, peeled and finely shredded

1 green apple, cored, quartered and thinly sliced

1 tbsp tomato puree

3 tbsp fat-free natural yogurt

1 level tbsp extra-light mayonnaise

2 tsp white wine vinegar

Method:

1 Preheat your oven to 200°C/fan 180°C/gas 6.

Pat the chicken with kitchen paper. Mix the piri piri, cumin, mace and two-thirds of the turmeric into the flour and season. Toss the chicken in the egg to coat thickly, then toss in the spiced flour. 2 Spray a non-stick baking tray with low-calorie cooking spray and add  the chicken in a single layer.

Spray with a little more low-calorie cooking spray and bake for 10 minutes, then turn over and bake for a further 5 minutes, or until cooked through.

3 Meanwhile, boil the potatoes with the remaining turmeric for 10 minutes, or until tender. Drain, return to the saucepan, then add the sweetcorn with its liquid and roughly mash.

4 Mix all the slaw ingredients together. Divide the corn mash and slaw between 4 bowls, then top each with 3 pieces of chicken.
