500ml chicken stock
800g skinless mini chicken breast fillets, roughly chopped
2 onions, roughly chopped
2 garlic cloves, finely chopped
2 carrots, peeled and cut into small cubes
4 celery stalks, roughly chopped
200g sugar snap peas, roughly chopped
2 level tsp chicken gravy granules
1 tsp Worcestershire sauce
A handful of fresh chives, finely snipped
Salt and freshly ground black pepper
1 egg, lightly beaten
100g from a 320g Jus-Rol Light Puff Pastry
Sheet Mixed salad leaves, dressed with lemon juice, to serve
1 Preheat your oven to 180°C/fan 160°C/gas 4. Put the stock, chicken, onions, garlic, carrots and celery in a large pan and bring to the boil. Reduce the heat and simmer, stirring often, for 15-20 minutes, or until the vegetables have softened and the chicken is cooked through.
2 Add the sugar snap peas, gravy granules and Worcestershire sauce and stir. Add the chives, season well and stir again. Divide the chicken filling between 4 individual pie dishes.
3 Brush the rim of each dish with beaten egg. Roll out the pastry on baking paper and cut into long, thin strips. Divide between the dishes and arrange the strips in a lattice pattern over the top of each one. Brush the pastry with more egg. Bake for 18-20 minutes, or until the pastry is puffed up and golden. Serve with the salad.
