SW recipe: Chicken Shawarma with red pepper houmous

Ingredients

For the red pepper houmous:

2 x 400g cans chickpeas, drained and rinsed
1 chicken stock cube
465g roasted red peppers in brine from a jar, drained, rinsed and patted dry
3 tbsp fat-free natural yogurt, plus extra to serve
1 garlic clove, crushed

For the chicken:

Low-calorie cooking spray
2 onions, finely sliced
800g skinless and boneless chicken thighs, cut into quarters
1 tbsp tomato purée
2 garlic cloves, crushed
1 tbsp ground cumin
1 tsp ground coriander
1 tsp ground cinnamon
¼-½ tsp cayenne pepper
1 bunch spring onions, finely sliced, reserving some to serve
25g fresh mint, leaves roughly chopped, reserving some to serve
½ tsp sumac, to serve (optional)

Method

1 To make the houmous, put the chickpeas in a saucepan with the stock cube, then add boiling water to cover. Simmer for 5 minutes, then drain. Tip the chickpeas into a food processor with the remaining houmous ingredients and season to taste. Whizz to make a smooth purée, then transfer to a mixing bowl. Cover with foil, then a tea towel to keep it warm while you make the chicken shawarma.

2 Spray a large, deep, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Stir-fry the onions for 8-10 minutes until softened and slightly coloured. Add the chicken and stir-fry for 5-6 minutes until starting to brown. Stir in the tomato purée, garlic and spices, and cook for 8-10 minutes, or until the chicken is cooked through, stirring frequently. Stir through the spring onions and mint.

3 Spread the houmous on a serving plate, top with the chicken and drizzle over the extra yogurt. Scatter over the remaining spring onions and mint, and the sumac (if using) to serve.
