600g chestnut mushrooms, thickly sliced
Low-calorie cooking spray
800g skinless and boneless chicken thighs, cut into bite-size pieces
3 shallots, finely chopped
3 garlic cloves, finely chopped
5 green peppercorns in brine, rinsed and drained
500ml chicken stock
A small handful of fresh tarragon, finely chopped
100ml dry white wine
2 level tbsp chicken gravy granules
Salt and freshly ground black pepper
350g dried penne, or other pasta shape, cooked, to serve
1 Put half the sliced mushrooms in a food processor and whizz until finely chopped. Set aside.
2 Spray a large frying pan with low-calorie cooking spray and place over a high heat. Add the chicken and stir-fry for 4-5 minutes, or until lightly browned. Transfer to a plate.
3 Reduce the heat to medium, add the shallots, garlic, peppercorns and finely chopped mushrooms, and stir-fry for 3-4 minutes.
4 Add the stock, tarragon and wine and bring to the boil. Add the chicken and sliced mushrooms, stir in the gravy granules, season and reduce the heat to medium-low. Cook for 20-25 minutes, stirring occasionally, until the sauce has reduced and thickened slightly.
5 Stir the sauce into the cooked pasta. Divide between 4 bowls and serve.
