SW recipe: Chilli chicken stir-fry

Ready in about 45 minutes

Ingredients:

600g skinless and boneless chicken thighs, each cut into 4 chunks

1/2 level tsp sweetener

2 tbsp Tamari or dark soy sauce

23ml Shaoxing rice wine

4 tsp oyster sauce

2 level tsp cornflour

120ml chicken stock

4 large carrots, peeled and sliced diagonally

600g mangetout

Low-calorie cooking spray

4 garlic cloves, sliced

10cm piece fresh root ginger, peeled and cut Into thin matchsticks

2 red chillies, deseeded and finely chopped

300g dried basmati rice, to serve

1 bunch spring onions, trimmed and cut into short lengths diagonally

Method:

1 Put the chicken in a small bowl with the sweetener, tamari or soy sauce, 2 tsp rice wine and the oyster sauce. Season, stir well and set aside to marinate.

2 In another small bowl, mix together the remaining rice wine, the cornflour and chicken stock and set aside. Boil the carrots in a large saucepan for 3-4 minutes, then add the mangetout, bring back to the boil and cook for a further minute. Drain and set aside.

3 Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a high heat. Add the garlic, ginger, chillies and a splash of cold water and stir-fry for 3-4 minutes, or until all the water has evaporated and everything is just tender.

4 Cook the rice according to the pack instructions, then drain. Meanwhile, add the chicken and any marinade to the wok or frying pan and stir-fry for 7-8 minutes, or until the chicken is cooked through. Add the carrots, mangetout and spring onions to the pan and stir-fry for a further 2 minutes, or unto everything is piping hot. Stir in the chicken stock mixture and bubble for 1 minute.

5 Divide the stir-fry between 4 bowls and serve with the rice.
