4 skinless and boneless chicken breasts, cut into chunks
1 level tbsp cornflour
1 onion, thickly sliced
1 green pepper and 1 red pepper, deseeded and roughly chopped
200g sugar snap peas
225g can bamboo shoots, drained
For the sauce:
Low-calorie cooking spray
1 onion, finely chopped
1 large garlic clove, crushed
1 tbsp curry powder
1 tsp turmeric
½ tsp ground ginger
600ml chicken or vegetable stock
1 tbsp soy sauce
Freshly boiled basmati rice, to serve
1 To make the sauce, spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Cook the onion for 5 minutes, or until softened, then add the garlic and cook for 1 minute. Add the spices and cook for 1 minute until fragrant. Stir in the stock and soy sauce, and bring to the boil. Reduce to a simmer and cook for 15 minutes, then remove from the heat.
2 Meanwhile, toss the chicken with the cornflour and season. Spray a lidded, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Stir-fry the chicken for a few minutes until browned. Add the onion and peppers, and stir-fry for a further 2-3 minutes, or until they start to soften.
3 Pour the sauce into the wok or frying pan, bring to the boil, then reduce to a simmer. Cover and cook for 10 minutes, or until thickened.
