Serves 4 Ready in about 40 minutes
Low-calorie cooking spray
2 onions, sliced
160g dried long-grain rice
200g chestnut mushrooms, halved (or quartered if large)
6 skinless and boneless chicken thighs, visible fat removed, sliced into thin strips
4 garlic cloves, crushed
3 tbsp reduced-salt soy sauce
2 tbsp fish sauce
4 medium eggs, lightly beaten
Juice of 2 limes
Handful fresh coriander, finely chopped
1 Spray a large, non-stick wok or frying pan with a little low-calorie cooking spray and place over a medium-high heat. Stir-fry the onions for 5-6 minutes, or until starting to soften. Meanwhile, cook the rice according to the pack instruction then drain well and allow to cool.
2 Add the mushrooms to the on is and stir-fry for 4-5 minutes. Add t chicken and garlic, and stir-fry for -6 minutes, or until the chicken is nearly cooked through. Add the cooled rice, cook for 3-4 minutes, then add the soy and fish sauces, and mangetout. Stir-fry for a further 3-4 minutes.
3 Make a well in the mixture using a spoon and pour in the eggs. Leave for 15-30 seconds, then quickly stir and leave again. Repeat until the eggs are scrambled, then mix into the rice. Stir-fry for 1-2 minutes, then stir through the lime juice and coriander. Divide between 4 bowls to serve.
