2 level tbsp cornflour
Juice of 2 lemons
2 tbsp light soy sauce
3cm-piece fresh root ginger, grated
2 garlic cloves, crushed
1 chicken stock cube
2 level tbsp sweetener granules
Low-calorie cooking spray
400g skinless and boneless chicken thighs, visible fat removed, chopped into bite-size pieces
2 onions, sliced
2 green peppers, deseeded and sliced
250g dried medium egg noodles
4 spring onions, finely sliced
30g fresh coriander, roughly chopped, reserving some to serve
1 To make the sauce, put the cornflour in a measuring jug and mix in the lemon juice with a fork. Add the soy sauce, ginger and garlic. Crumble in the stock cube, then add the sweetener and 350ml boiling water. Stir everything together, then set aside.
2 Spray a large, non-stick wok or frying pan with low-calorie cooking spray and place over a medium-high heat. Add the chicken in a single layer and cook for 2-3 minutes on each side until browned a little, then transfer to a plate and set aside. You may have to do this in batches.
3 Add the onions and peppers to the pan, and stir-fry for 4-5 minutes, adding a splash of water if the veg start to catch on the pan. Return the chicken to the pan, pour in the sauce, then bubble for 4-5 minutes, or until thickened and glossy, and the chicken is cooked through. Meanwhile, cook the noodles according to the pack instructions, then drain.
4 Season the chicken mixture to taste, then stir in the spring onions and coriander. Divide the noodles and chicken between 4 bowls, and top with the reserved coriander and freshly ground black pepper to serve.
