Serves 2 – 9 syns per person
Ingredients:
1 tablespoon low fat/light butter, melted – 2.5 syns (Check your own brand as they all vary)
2 tablespoons soft dark brown sugar – 6 syns
1 tablespoon sweetener
Generous pinch of salt
1 egg yolk
½ teaspoon vanilla extract
¼ teaspoon bicarbonate of soda
4 tablespoons plain flour – 8 syns (Check your own brand as they all vary)
6g chocolate chips – 1.5 syns
Method:
Preheat oven to 180°C.
Whisk the melted butter with the sugar and sweetener in a bowl, add the egg yolk and vanilla and continue whisking until light and fluffy.
Add the flour and bicarb and use a rubber spatula to mix until all the flour is incorporated.
Add the chocolate chips and mix in until roughly combined.
Spread the cookie batter between 2 greased mini skillet pans, or one medium sized pan, leaving a little space around the edge (It will spread out when baking).
Place the skillet(s) in the oven and bake for 15-20 minutes until the edges are starting to brown and go crisp. Leave in the oven for an extra 5 minutes if you want a crispier cookie.
