SW recipe: Chorizo mac ‘n’ cheese

Serves 4- 4.5syns per serving.

Ingredients:

 

⭐️60g chorizo, skin removed, halved lengthways and thinly sliced.
⭐️2 leeks, thinly sliced
⭐️2 red peppers, halved, deseeded and thinly sliced
⭐️2 garlic cloves crushed
⭐️1 tsp smoked paprika
⭐️1.2 litres boiling chicken or vegetable stock
⭐️500g dried macaroni
⭐️200g plain quark
⭐️60g reduced fat cheddar, coarsely grated

Method:

⭐️Place a large non-stick saucepan over a medium-high heat. When it’s hot, add the chorizo and fry for 1 minute or until the oil starts to run. Add the leeks, peppers and garlic and cook for 3 minutes. Stir in the paprika and cook for 1 minute.
⭐️Add the stock and macaroni to the pan and bring to the boil, stirring to make sure nothing sticks. Reduce the heat to low, cover and cook for 7-8 minutes or until the stock has been absorbed and the macaroni is just tender.
⭐️Meanwhile, preheat your grill to high.
⭐️Remove the macaroni from the heat, stir in the quark and season lightly. Spoon the mixture into 1-2 pans or heatproof dishes that will fit under your grill. Sprinkle with the cheese and pop under the grill for 5 minutes or until golden brown and bubbling. Serve hot with salad or Speed vegetables.
