750g mashed potato
3 tbsp quark
Any leftover cooked veg from Christmas dinner
120g cooked ham
200g cooked skinless turkey (or any leftover lean meat from Christmas dinner)
Line the bottom of an 8” loose bottomed cake tin with greaseproof paper
Fry the shallot and mushrooms in a non-stick pan over a medium to high heat for 5-6 minutes and mix with any leftover vegetables and lean meat from Christmas dinner.
Mix the quark, eggs and parsley with the mashed potato and spread half the mixture on the bottom of the cake tin. Spoon over the leftovers and top with the rest of the mash.
Bake at 180c gas mark 6 for 30 minutes or until the potato is golden brown.
