SW recipe: Chunky meatball minestrone stew

Ready in about 40 minutes

Ingredients:

500g lean beef mince (5% fat or less)

1 tbsp dried oregano

low-calorie cooking spray

2 onions, diced

3 garlic cloves, crushed

2 carrots, peeled and diced

2 celery sticks, diced

2 yellow peppers, deseeded and diced

400g can chopped tomatoes

3 tbsp tomato puree

1 tbsp red wine vinegar

1 vegetable stock cube, crumbled

200g dried macaroni

400g can borlotti beans, drained and rinsed

Fresh basil leaves, to serve

Method:

1 Mix the beef, 2 tsp dried oregano and some seasoning together in a bowl and roll into 20 meatballs. Spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Brown the meatballs in batches. lifting them out onto a plate as you go, and set aside.

2 Add the onions, garlic, carrots, celery and peppers to the frying pan with a mug of water and cook for 10 minutes, or until softened, splashing in a little more water if necessary.

3 Transfer the veg mixture to a large casserole dish with the chopped tomatoes. tomato puree, vinegar, stock cube, remaining dried oregano and 600m1 water.

4 Bring to the boil, then add the macaroni, cover and simmer for S minutes. Stir through the meatballs, recover and simmer for a further 5.8 minutes, or until the pasta is tender and the meatballs are cooked.

5 Stir in the beans, heat through for 2 minutes, then ladle into bowls. Sprinkle over basil leaves and serve.
