SW recipe: Churrasco steak with fruit salsa salad & sweet potato rounds

Ingredients

Juice of 2 limes
1 tsp smoked paprika
1 tsp ground cumin
2 tbsp Worcestershire sauce
1 tsp garlic powder, or 1-2 cloves, crushed
4 lean rump steaks, visible fat removed (about 200g each), cut into 30 long strips
1kg sweet potatoes, peeled and sliced into ½cm rounds
Low-calorie cooking spray

For the salsa salad:

1 fresh pineapple, peeled, cored and cut into small chunks
460g jar roasted red peppers in brine, drained and chopped
5 tomatoes, deseeded and chopped
1 large red onion, chopped
1 red chilli, deseeded and finely chopped
Juice of 2 limes
½ small pack fresh coriander, leaves roughly chopped

Method

1 Mix together the lime juice, paprika, cumin, Worcestershire sauce and garlic powder in a bowl. Add the steak strips, toss to coat and leave to marinate in the fridge for up to 1 hour.

2 Thread 5 strips of steak across 2 wooden skewers (pre-soaked in water), folding over the strips as you go so that each piece of steak is pierced twice. Repeat with the remaining steak and chill until needed. Meanwhile, mix together all the salsa salad ingredients in a bowl, except the coriander, and set aside.

3 When you’re ready to cook, preheat your barbecue or a non-stick griddle pan to hot. Spray the sweet potato slices with low-calorie cooking spray, season and cook for 5-6 minutes on each side until tender. Remove to a bowl and cover with cling film while you cook the steak skewers (this will help keep the potatoes warm and steam them slightly to ensure they’re cooked through).

4 Cook the steak skewers on the barbecue or griddle pan for 2-3 minutes on each side, or until cooked through. Just before serving, add the coriander to the salsa and season. Serve 1 double skewer per person with the salsa salad and sweet potato rounds.
