- 2 eggs
- 1 heaped dessert spoon of sweetener
- 1 heaped dessert spoon of no-fat fromage frais
- 1 tsp or more of cinnamon
- a drop (or three!) of flavouring – I like vanilla, or for an extra kick of sweetness, orange extract.
- Beat the eggs
- Add all of the other ingredients and mix until smooth – I find this works best with a small whisk
- Cook in butter FryLight over a medium-low heat. If you try to flip too soon, they’ll break up but if you leave it too long they will burn, so keep a close eye.
- Serve with a selection of fruit, the more speed the better. I like it with banana (not speed, but so good with cinnamon!), plus apple, strawberries and passion fruit.
