SW recipe: Coconut vegetable curry

Ingredients

Low-calorie cooking spray

1 red onion, finely sliced

2 garlic cloves, crushed

5cm-piece fresh root ginger, peeled and grated

1 tbsp medium curry powder

800ml plain unsweetened coconut drink

1 head of cauliflower, cut into florets

500g new potatoes, quartered

200g green beans, trimmed

250g dried basmati rice

20g fresh coriander, leaves roughly chopped, reserving a few whole leaves to serve

2 limes

Method

1 Spray a large, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and fry for 5-6 minutes until slightly softened. Add the garlic, ginger and curry powder with a splash of water and fry for 2-3 minutes until fragrant. Pour in the coconut drink and bring to a simmer. Add the cauliflower and potatoes, half-cover and simmer gently for 20 minutes.

2 Add the beans and simmer uncovered for a further 10 minutes until the potatoes are tender. Meanwhile, cook the rice according to the pack instructions, then drain. Season the curry and stir through the chopped coriander and the juice of one lime. Divide between 4 bowls with the rice and scatter over the reserved coriander. Slice the remaining lime into wedges for squeezing over.

COOK’S NOTE
This is quite a soupy curry – if you’d prefer a thicker consistency, remove a couple of ladlefuls of veg and sauce before adding the beans in step 2. Purée until smooth using a stick or jug blender, then pour back into the pan and continue with step 2.
