SW recipe: Coffee and walnut rice pudding

Ingredients:

120g dried pudding rice

450ml unsweetened Alpro Roasted Almond drink

2 tsp vanilla extract

4 tbsp strong brewed coffee (such as espresso)

1 level tbsp cocoa powder

3 level tbsp sweetener

20g walnuts, roughly chopped

Method:

1 Preheat your oven to 150°C/ fan 130°C/gas

2. Mix the pudding rice with the almond milk, vanilla extract, coffee, cocoa powder, sweetener and 350ml water in a deep, A4-size baking dish.

2 Cover with foil and bake for 1 hour 30 min. Stir, then re-cover with the foil and bake for a further 30-40 minutes, or until the rice is tender and creamy.

3 Divide the rice pudding between 4 bowls and top each with a quarter of the chopped walnuts.
