SW recipe: Colcannon parsnip cakes with bacon

EVERYDAY EASY Serves 6 Ready in about 40 minutes, plus chilling


500g parsnips

200g floury potatoes

200g diced savoy cabbage from a whole cabbage (reserving the rest for the main)

3 sliced spring onions

1 egg yolk

1 tsp mustard powder

12 smoked bacon medallions (visible fat removed)

low-calorie cooking spray

150g fat-free natural fromage frais

1 tbsp cider vinegar


Ground black pepper

Salad leaves.


Preheat your oven to 200°C/fan 180°C/gas 6. Peel and chop 500g parsnips and 200g floury potatoes. Boil for 10 minutes, or until really soft, then add 200g diced savoy cabbage from a whole cabbage (reserving the rest for the main) and 3 sliced spring onions.

Cook for 2 minutes. Drain, return to the pan and cook for 5 minutes more. Roughly mash together with 1 egg yolk, 1 tsp mustard powder and seasoning Shape into 6 cakes and chill for 15 minutes.

Lay 12 smoked bacon medallions (visible fat removed) on a non-stick baking tray. Spray a non-stick frying pan iv with low-calorie cooking spray and place over a medium-high heat. Brown the cakes on each side, then add to the bacon tray and bake everything for 15 minutes.

Top each cake with 2 bacon slices and snipped cress. Whisk 150g fat-free natural fromage frais with 1 tbsp cider vinegar and enough water to make it drizzly, then pour over the bacon.

Add ground black pepper and serve with salad leaves.
