500g floury potatoes, such as Maris Piper or King Edward, cut into small chunks

350g carrots, peeled and roughly chopped

350g parsnips, peeled and roughly chopped

Low-calorie cooking spray

2 x 200g cans lean corned beef

1 large onion, sliced

2 tbsp Worcestershire sauce

15g fresh sage, leaves chopped

1 savoy cabbage, roughly shredded

8 very fresh large eggs

15g fresh flat-leaf parsley, leaves roughly chopped, reserving some to serve


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the potatoes, carrots and parsnips on a large, non-stick baking tray in a single layer. Spray with low-calorie cooking spray and roast for 35-40 minutes, or until cooked through, turning halfway.

2 While the veg are roasting, spray a large, lidded, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Fry the corned beef for 5-8 minutes. Remove using a slotted spoon and set aside on kitchen paper to keep it crisp. Reduce the heat to medium and fry the onion for 5 minutes. Add the Worcestershire sauce, sage and 50ml water, and cook for 5 minutes.

3 Add the roasted veg and fry for 5 minutes, squashing down the mixture to flatten slightly. Add the cabbage, then cover and cook for a further 5 minutes (add a splash of water if the veg starts to stick to the pan). Meanwhile, place a wide, deep pan filled with just-boiled water over a medium-low heat. Carefully crack in the eggs and poach for 3-4 minutes. Remove with a slotted spoon and set aside on kitchen paper.

4 Add the parsley and all but 2 tbsp corned beef to the hash. Divide between 4 plates, top with the eggs, and scatter over the reserved parsley and remaining corned beef.
