Ingredients

  •  Cooking spray
  •  1 Onion Chopped
  •  3 Garlic cloves Crushed
  •  1 kg Courgette Chopped
  •  1 Leek Chopped
  •  1.8 ltrs Veg stock
  •  125 g Frozen Peas/Petit Pois Optional
  •  Parmesan and chives to serve

Instructions

  1. Spray a heavy bottomed pan with cooking spray.

  2. Fry onions and garlic, until softened.

  3. Add courgettes, frozen Peas and leeks, and cook for a further 5 minutes.

  4. Add in your stock and bring to the boil.

  5. Boil for around 15 – 20 minutes. Until the courgettes are soft.

  6. Blend to give a smooth consistency.

  7. Serve with some parmesan and chives and enjoy!
