Serves Ready in about 30 minutes

Ingredients:

300g dried spaghetti 4 large eggs*

2 tbsp fat-free natural Greek-style yogurt

3 level tbsp grated fresh Parmesan

Low-calorie cooking spray

200g lean gammon, visible fat removed, diced

2 garlic cloves, thinly sliced

3 large courgettes, spiralled (or 300g pack courgetti)

Method:

1 Cook the spaghetti according to the pack instructions. Drain and set aside, reserving a little of the cooking water. Meanwhile, beat together the eggs, yogurt and 2 level tbsp Parmesan with a little seasoning.

2 Spray a non-stick frying pan with low-calorie cooking spray and place over a medium heat. Cook the gammon for 3-4 minutes, or until cooked through. Add the garlic and courgetti with a splash of water and cook for 2 minutes.

3 Add the spaghetti to the pan with a couple of spoonfuls of the reserved cooking water, then turn off the heat and toss everything together. Add the egg mixture and stir through to coat evenly. Divide between 4 bowls and top each with a quarter of the remaining Parmesan.
