SW recipe: couscous, aubergine, mint & feta salad with lamb skewers

Ready in about 1 hour, plus marinating

For the lamb skewers:

8 lean lamb leg steaks, cut into bite-size pieces, visible fat removed

100g fat-free natural Greek-style yogurt

Juice of 1 lime

1 tsp each of ground cumin and ground cinnamon

2 garlic cloves, crushed

For the salad:

1 medium aubergine and 1 courgette, sliced into 1cm-thick rounds

Low-calorie cooking spray

200g dried giant couscous

1.5 litres hot vegetable stock

300g yellow cherry tomatoes, halved or quartered

200g pomegranate seeds

Juice of 2 lemons

Small pack fresh mint, some whole sprigs and some leaves roughly chopped

50g reduced-fat feta, crumbled

Method:

1 Put the lamb in a mixing bowl with the yogurt, lime juice, cumin, cinnamon and garlic. Toss to combine, then season and leave to marinate in the fridge for 3-4 hours, or overnight if you can.

2 Preheat a non-stick griddle or frying pan to hot. Spray the aubergine and courgette with low-calorie cooking spray and cook in batches for 10-12 minutes, or until tender, turning halfway. Remove to a tray, cover with cling film and set aside to cool.

3 Boil the couscous in the stock for 8-10 minutes, or until tender. Drain well and transfer to a platter.

4 Preheat your grill to high. Thread the lamb onto 8 wooden skewers (soaked in water) or metal skewers and grill for 3-4 minutes on each side, or until just cooked through.

5 Add the aubergine, courgette, tomatoes, pomegranate seeds, lemon juice and half the chopped mint to the couscous. Season and toss to mix. Evenly scatter over the feta and top with the lamb skewers. Sprinkle with the remaining mint leaves and sprigs and divide between 4 plates.
