8 Slimming World Syn-free Pork sausages (available from Iceland)
4 large potatoes
low calorie cooking spray
1 large onion, roughly chopped
2 garlic cloves, crushed
2 large carrots, peeled and diced
150ml hot vegetable stock
400g can chopped tomatoes
415g can baked beans
400g can mixed beans, drained and rinsed
400g chickpeas, drained and rinsed
salt and freshly ground pepper
Cook the sausages according to the pack instructions, cut into 3 pieces and set aside.
Cook the potatoes until tender, drain and set aside.
Spray a deep, non-stick casserole pan with low calorie cooking spray, add the onion and garlic and cook over a medium heat for 10 minutes, stirring occasionally. Add a splash of water if it starts to stick.
Add the carrots, stock and chopped tomatoes. Bring to the boil, cover ad simmer for 15 minutes. Stir in the baked beans, mixed beans and chickpeas, season and cook for a further 5 minutes to heat through.
Stir in the chopped sausages and spoon into individual dishes. Top with sliced potatoes and grill for 2-3 minutes or until browned.
