300g dried linguine
2 garlic cloves, crushed
1 red chilli, deseeded and finely chopped (optional)
pack cherry tomatoes, halved
1 x 170g can crabmeat, drained
½ small pack fresh basil leaves, shredded
Cook the pasta according to the pack instructions, adding the sugar snap peas for the last 3 minutes of the cooking time.
Meanwhile, heat a large non-stick frying pan over a medium heat. Add the garlic, chilli and a splash of water and cook for 2 minutes, adding more water if needed. Add the cherry tomatoes and cook until they start to soften, stirring occasionally. Add the crabmeat and heat through.
Drain the pasta and sugar snap peas, reserving a few tablespoons of the cooking water.
Add the pasta, sugar snaps and basil to the tomato and crab mixture, along with the cooking water. Toss well, season to taste and serve with heaps of salad.
Swap the crabmeat for king prawns, lean bacon, ham, chicken, Quorn pieces or simply enjoy on its own – without the crabmeat.
