4 large carrot
400g fresh beetroot
3 peeled and crushed garlic cloves
4 trimmed and finely sliced leeks
1.2 litres vegetable stock
75g fat-free natural fromage frais
Freshly ground black pepper
Fresh chives to serve
Peel and roughly chop 4 large carrots and 400g fresh beetroot (or use vacuum-packed beetroot) and place in a large saucepan with 3 peeled and crushed garlic cloves, 4 trimmed and finely sliced leeks, 1.2 litres vegetable stock and a bay leaf.
Cover tightly and simmer for 40 minutes, or until the vegetables are tender. Remove the bay leaf and allow to cool slightly.
Transfer the mixture to a food processor, add 75g fat-free natural fromage frais and blend until smooth. Return to the pan and reheat gently.
Sprinkle with freshly ground black pepper and some chopped fresh chives. Serve with extra fromage frais.
