Ingredients – to serve 4

4 skinless chicken breasts
Dried Rosemary
Frylight
8 smoked bacon medallions (or just cut the fat off normal bacon)
1 large onion- chopped
1 pack of mixed mushrooms
3 crushed cloves of garlic
1 litre of chicken stock
400g arborio rice
2 teaspoons of Porcini Mushroom Paste (2 syns)
1 tablespoon of balsamic vinegar
2 tablespoons of Quark
120g reduced fat cheese
Rocket to serve
25g Parmesan (1 Healthy Extra A)
Balsamic Glaze to serve (2 Syns)
Salt and pepper

Method:

Preheat oven at 180 Celcius.

Spray chicken breasts with frylight and season with salt and pepper and some dried rosemary. Put in a roasting dish in the oven for 20-25 minutes depending on size.

Spray a large frying pan with frylight and and the onion and crushed garlic to the pan to soften. If it starts to stick at any point, spray additional frylight in the pan to prevent this. Once the onion is softened, add the bacon and cook over a medium heat until it is cooked through. At this point add the chopped mushrooms and arborio rice and a small amount of the chicken stock. Continually stir the pan until most of the liquid has been absorbed by the rice. Gradually continue to add the stock to the pan, stirring throughout to prevent sticking to the pan.

Once all the liquid has been added, taste the mixture. If the grains are cooked to your liking, then you can move onto the next steps. If they are still too firm, then keep gradually adding hot water from your kettle until the mix has the texture of rice that you enjoy.

Once you are happy with the texture of the rice, add the mushroom paste, reduced fat cheese, balsamic vinegar and quark and mix through thoroughly. At this point you may wish to add some additional seasoning. Take the risotto off the heat and remove chicken from the oven.

Slice the chicken on a diagonal into bite size pieces. Put a quarter of the risotto on the plate, top with the chicken, some rocket, a quarter of the grated Parmesan and a tablespoon of balsamic glaze.
