Ingredients

Low-calorie cooking spray

2 red onions, sliced

4 red peppers, deseeded and finely sliced

2 garlic cloves, crushed

2 tsp hot or sweet smoked paprika

15g fresh flat-leaf parsley, leaves roughly chopped

250g plain quark

8 large eggs

Lettuce and sliced cucumber salad dressed with lemon juice, to serve

Method

1 Preheat your oven to 180°C/fan 160°C/gas 4. Spray a 24cm, ovenproof, non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Add the onions and peppers, and fry for 8 minutes until starting to colour and caramelise, stirring frequently. Add 50ml water and cook for a further 5 minutes, or until everything is soft. Remove from the heat, then stir in the garlic, paprika and parsley, and leave to cool for 5 minutes.

2 Meanwhile, put the quark in a large bowl with ¼ tsp salt. Whisk in the eggs, one at a time, until the mixture is smooth. Add the pepper mixture and stir well.

3 Wipe out the frying pan with kitchen paper, and spray the base and sides with low-calorie cooking spray. Pour in the egg mixture and bake in the oven for 25-30 minutes, or until the egg is cooked through. Leave to rest for 15 minutes, then slice into wedges. Serve hot or cold with the salad.
