Syns per serving – 1
4 level tbsp extra light mayonnaise ( 1 Syn per tablespoon)
150g fat-free natural yogurt
2 tsp tomato puree
1 tbsp curry powder (mild, medium, or hot – whichever you prefer)
1 large bag ready prepared green salad
375g cooked skinless turkey
1 roasted red pepper out of a jar, cut into thin slivers
1 large mango, peeled, stone removed and diced
Add all the dressing ingredients in a bowl and mix well. Arrange the salad leaves onto a serving plate and add the turkey. Drizzle with the curry dressing and arrange the slivers of roasted peppers on top.
Scatter over the diced mango and serve straight away.
