3 Diced Chicken Breast
1 Red Bell Pepper
1 Green Bell Pepper
1 Yellow Bell Pepper
1 Large Onion
330ml Diet Coke
200ml Boiling Chicken Stock
4 Cloves Crushed Garlic
1 Tbsp Worcestershire Sauce
4 Tbsp Tomato Puree
2 Tbsp Dark Soy Sauce
0.5 Tsp Chinese Five Spice
1 Tsp Mixed Herbs
5 Sliced Spring Onions
Hand Full Florets Broccoli
As needed Low Calorie Cooking Spray
Spray a non-stick pan with low calorie spray, over a high heat. Add the chicken, onions and peppers until lightly browned. Set aside.
Spray the pan with low calorie spray, add the garlic and spices stir fry for 1 min. Add the tomato puree, soy sauce, Worcestershire sauce, passata, Diet Coke and stock, bring to the boil and simmer for 12-15 minutes. Add the broccoli and continue to reduce the sauce.
When the sauce starts to thicken return the chicken, onions and peppers with the remaining broccoli.
Cook for a further 10-15 minutes until the sauce is reduced and coats the back of your spoon.
Serve with rice and extra speedy vegetables
