SW recipe: Dolmades

These lemon-scented rolls are a Greek delicacy and they’re superb served as snacks or with a side salad. Grab your plates, but be sure not to smash them!
Serves: 4
Prep time: 5 minutes
Cook time: 2 hours

12 fresh vine leaves
1 small onion
450g tomatoes
3 garlic cloves
Low calorie cooking spray
150g boiled rice
2 tbsp passata
1 tbsp each of freshly chopped parsley, mint and oregano
½ tsp cinnamon
2 tbsp lemon juice
Salt and freshly ground black pepper


1. Blanch the vine leaves, in batches, in boiling water for 30 seconds, rinse under cold water then spread out vein-side up.
2. Chop the onion; skin, deseed and chop the tomatoes; crush the garlic. Heat some low calorie cooking spray in a pan, add the onion and fry until soft. Add the rice, one third of the tomatoes, the passata, parsley, mint, cinnamon and 2 cloves of garlic and heat through. Stir in the lemon juice and seasoning and remove from the heat.
3. Place half of the remaining tomatoes in a casserole dish. Divide the rice between the leaves, fold the sides over the filling, then roll up. Place in a layer over the tomatoes and top with the remaining tomatoes, garlic and oregano. Place a plate on top to prevent the dolmades unrolling, cover and simmer for 1½-2 hours. Serve hot or cold with the juices spooned over.
Tip: Cabbage or spinach leaves work just as well as vine leaves.
