SW recipe: Double chicken burger with slaw and chips

Ingredients

1kg floury potatoes, such as Maris Piper or King Edward, sliced into chips

Low-calorie cooking spray

½ pointed spring cabbage, core removed and shredded

200g carrots, peeled and coarsely grated

1 red onion, finely sliced

150g fat-free natural Greek yogurt

1 garlic clove, crushed

Juice of 1 lemon

4 large skinless and boneless chicken breasts

1½ tsp sweet or hot smoked paprika

4 x 60g wholemeal rolls, split

1 beef tomato, cut into 4 slices

90g salad leaves

Method

1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the chips on 1 or 2 non-stick baking trays in a single layer and spray with low-calorie cooking spray. Season and cook for 40 minutes, or until golden, turning halfway.

2 Meanwhile, put the cabbage, carrots, onion, yogurt, garlic and lemon juice in a large mixing bowl with some seasoning. Use your hands to mix everything together and coat the veg in the yogurt. Set aside.

3 Put the chicken breasts between 2 pieces of baking paper and use a rolling pin or frying pan to bash them so they flatten out to about 1cm thick. Cut each breast in half, then dust with the paprika, and spray with low-calorie cooking spray.

4 Heat a non-stick griddle pan until smoking, then cook the chicken for 1½-2 minutes on each side in 2 batches, keeping the cooked pieces warm under foil on a plate while you cook the rest. If you like, toast the split sides of the rolls on the griddle. Fill each roll with a tomato slice, a few salad leaves, 2 chicken burgers and a dollop of coleslaw. Serve with the chips, the remaining slaw and the salad leaves on the side.
