2 level tbsp hoisin sauce
2 tbsp oyster sauce
4 tbsp dark soy sauce
1 tsp Chinese five-spice
400ml cooled chicken stock
Low-calorie cooking spray
4 skinless and boneless duck breasts, visible fat removed, thinly sliced
1 tbsp finely grated fresh root ginger
3 garlic cloves, grated or crushed
2 red chillies, thinly sliced
200g thin-stemmed broccoli, sliced lengthways
200g baby spinach
2 Spray a wide, non-stick frying pan or wok with low-calorie cooking spray and place over a medium-high heat. Add the duck and stir-fry for 3-4 minutes, or until sealed and lightly browned.
3 Stir in the ginger, garlic and chillies and stir-fry for 1 minute. Stir in the sauce mixture and bring to the boil. Bubble for 5 minutes, or until starting to thicken. Stir in the broccoli and spinach and cook for a further 3-4 minutes, or until the broccoli is just tender and the spinach has wilted. Divide between 4 plates to serve.
GIVE IT A TWIST
If you’re not so keen on duck, simply swap for strips of lean beef or pork tenderloin (visible fat removed)
