SW recipe: Easy peasy houmous

SUPER SIMPLE
Serves 6

V .Vegan  
Ready in about 10 minutes

Ingredients

400g can chickpeas, drained

1 garlic clove, crushed

2 tsp ground cumin

1 tsp cumin seeds, plus extra to serve

Juice of 1 lemon

200g frozen peas

Dipping vegetables, such as baby carrots, cucumber slices and celery sticks

Method

1 Tip the chickpeas, garlic, ground cumin, cumin seeds, lemon juice and 5 tbsp water into a food processor and whizz until smooth. Chill until you’re almost ready to pack for your picnic.

2 Just before you leave for your picnic, whizz the frozen peas into the chickpea mixture in a food processor in 2 batches – whizz the first half until smooth, then pulse the second half so it stays a bit chunkier.

3 Stir, then sprinkle with extra cumin seeds and pack with a mix of dipping-friendly vegetables.

COOK’S NOTE
Adding frozen peas to the houmous at the last minute will keep it cool and fresh until you’re ready to dip!
