SW recipe: Egg and bacon muffins

Ingredients:

6 rashers back bacon, all visible fat removed

4 level tbsp self-raising flour

80g reduced-fat Cheddar cheese, grated

1 tsp mustard powder

6 medium eggs

100g fat-free natural yogurt

6 cherry tomatoes, finely chopped

4 spring onions, finely chopped

Salt and freshly ground black pepper

Method:

1 Line 8 holes of a 12-hole muffin tin with paper cases. Preheat your oven to 200°C/fan 180°C/ gas 6 and preheat your grill to medium-high.

2 Grill the bacon for 2-3 minutes each side, allow to cool, then chop.

3 Mix the flour, cheese, bacon and mustard powder in a bowl. In another bowl, beat the eggs and yogurt until smooth. Stir the flour mixture into the egg mix, add the tomatoes and onions, then season.

4 Spoon the mixture into the cases and bake for 25-30 minutes, or until golden on top. Serve warm or at room temperature.
