Ready in about 1 hour
700g sweet potatoes, peeled and cut into 2cm cubes
400g can chickpeas, drained and rinsed
15g fresh coriander, roughly chopped
1 tbsp dried ras el hanout spice mix
Low-calorie cooking spray
4 x 60g wholemeal pitta breads, to serve
For the salad:
400g red cabbage, shredded
3 carrots, peeled and sliced into ribbons
2 Granny Smith apples, cored and thinly sliced
15g fresh coriander, roughly chopped, reserving some to serve
Juice of 1 lemon
For the yogurt dressing:
200g plain unsweetened dairy-free soya yogurt with added calcium
1 garlic clove, crushed
Juice of 1 lemon
1 Preheat your oven to 200°C/fan 180°C/gas 6. Boil the potatoes for 15 minutes, or until really tender. Drain, then transfer to a food processor with the chickpeas. coriander and ras el hanout (if you don’t have a food processor, put everything into a large bowl and mash together). Whizz in short bursts to keep some texture, then scoop out and shape into 12 balls.
2 Place the falafel on a large, non-stick baking tray. Spray with low-calorie cooking spray and bake for 25 minutes.
3 Meanwhile, mix together the cabbage, carrot, apple, coriander and lemon juice, and set aside. Combine all the dressing ingredients. transfer to a serving bowl and top with a twist of black pepper.
4 Lightly toast and split the pitta breads. Fill each with 3 falafel, salad and yogurt dressing and serve 1 per person.
