SW recipe: Falafel with herb giant couscous

Serves 4

Ready in about 35 minutes


2 x 400g cans chickpeas, drained and rinsed
2 onions, 1 roughly chopped, 1 thinly sliced
2 garlic cloves, crushed
1 tsp cumin powder
1 tsp sweet smoked paprika, plus extra to serve
1½ small packs fresh flat-leaf parsley, leaves roughly chopped
Low-calorie cooking spray
3 tbsp white wine vinegar
200g dried giant couscous
½ small pack fresh mint, leaves roughly chopped, reserving some to serve
Zest of 1 unwaxed lemon, juice of ½
150g fat-free natural yogurt
Salad of sliced iceberg lettuce, cucumber and tomatoes
Pickled cabbage and chillies, to serve


1 Preheat your oven to 190°C/fan 170°C/gas 5 and line a baking tray with baking paper.

2 Put 1 can of chickpeas, the roughly chopped onion, garlic, spices and two-thirds of the parsley in a food processor. Season, then whizz until smooth (occasionally scraping down the sides). Add the second can of chickpeas and whizz until the chickpeas are broken down but still chunky. Roll the mixture into 12 balls and space out on the lined baking tray. Flatten the balls into 1cm-thick discs, spray with low-calorie cooking spray and bake for 20 minutes.

3 Meanwhile, put the sliced onion and white wine vinegar in a bowl with a pinch of salt. Stir and set aside. Cook the couscous according to the pack instructions (without butter or oil). Stir through the remaining parsley and the mint and lemon zest, then season.

4 Mix the yogurt and lemon juice in a bowl, sprinkle over a little smoked paprika and set aside. Divide the salad, couscous, falafels and cabbage between 4 plates. Drain the onion and scatter over the salad with some freshly ground black pepper. Drizzle over the yogurt. Scatter over the reserved mint and serve with the pickled chillies.
