SW recipe: Feta-topped portobello mushrooms

Ingredients:

Low-calorie cooking spray

1 small onion, finely chopped

1 garlic clove, crushed

6 portobello mushrooms, stalks cut off and chopped

1 tbsp chopped fresh oregano, plus a few leaves and sprigs to serve

400g can plum tomatoes

A pinch of sweetener

100g reduced-fat feta cheese, diced

Method:

1. Spray a non-stick saucepan with low-calorie cooking spray and place over a medium heat. Add onion and garlic and cook for 5 minutes, then add mushroom stalks and cook for another 5 minutes.

2. Add oregano and tomatoes plus the juices in the can and bring to a simmer. Reduce heat to low and cook for 10 minutes or until thickened. Add sweetener and season.

3. Spray mushroom caps with low-calorie cooking spray and turn them upside down. Spoon in the tomato sauce, scatter feta on top and barbecue over direct medium heat for 8-10 minutes. Or, cook under a medium-high grill. Scatter over the oregano leaves to serve.
