Nacho-style feast


Serves 2

Ready in 1 hour 15 minutes


2 large floury potatoes, such as Maris Piper or King Edward, cut into wedges
Low-calorie cooking spray
250g lean beef mince (5% fat or less)
1 onion, sliced
1 red pepper, deseeded and finely chopped
2 tsp ground cumin
1 tsp paprika
2 garlic cloves, crushed
400g can chopped tomatoes
150g tube Primula Light Cheese
1 fresh jalapeño pepper, finely sliced, to serve
Fresh coriander leaves, to serve


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread the wedges on a large, non-stick baking tray in a single layer and spray with low-calorie cooking spray. Season and cook for 40-50 minutes, or until golden, turning halfway.

2 Meanwhile, dry-fry the mince in a large, non-stick frying pan over a medium-high heat until browned all over, then drain off any liquid. Add the onion and cook for 5-6 minutes, or until softened. Add the pepper, cook for 2-3 minutes, then add the cumin, paprika and garlic with a splash of water. Stir in the tomatoes and bring to a simmer. Cook for 10-15 minutes, stirring occasionally, until thickened.

3 Increase the oven to 220°C/fan 200°C/gas 8. Tip the wedges into 2 ovenproof dishes (or 1 large dish). Spoon over the mince, then evenly squeeze over the Primula Light Cheese. Bake for 8-10 minutes, or until the cheese is starting to brown. If you’ve used 1 large dish, divide everything between 2 plates. Sprinkle over the jalapeño pepper and coriander leaves to serve.
