Fillet steak with mushroom sauce & boulangere potatoes
Serves 4 Ready in about 1 hour


1 tbsp dried rosemary

1 tsp garlic salt

1 tbsp pink peppercorns, crushed

1 tbsp black peppercorns, crushed

4 beef fillet steaks, visible fat removed

400g baby spinach, to serve

For the potatoes:

1kg floury potatoes, such as Desiree or King Edward, peeled and very thinly sliced

2 onions, thinly sliced

4to 6 sprigs of fresh thyme

425ml hot vegetable stock

Low-calorie cooking spray

For the sauce:

2 shallots, chopped

2 tsp mustard powder

300ml chicken or beef stock

300g mixed mushrooms (button, chestnut, shiitake), finely chopped

2 tbsp fat-free natural fromage frais

2 tbsp finely chopped fresh flat-leaf parsley, plus extra to serve


1 Preheat your oven to 200°C/fan 180°C/gas 6. Spread a layer of potato slices over the base of a 1-1/2 litre baking dish. Scatter over a few onion slices and a thyme sprig, then repeat the layers to fill the dish, finishing with potatoes. Pour over the stock, spray with low-calorie cooking spray and season. Bake for 1 hour, or until the potatoes are cooked and golden.

2 Meanwhile, for the sauce, whisk together the shallots, mustard powder and stock in a saucepan, and bring to the boil. Reduce the heat, add the mushrooms and simmer for 15-20 minutes, or until thickened. Take off the heat. Stir in the fromage frais and parsley, season and keep warm.

3 Rub the rosemary, garlic salt and peppercorns over the steaks. Spray a large, non-stick frying pan with low-calorie cooking spray and cook the steaks over a high heat for 1-2 minutes on each side for rare, 2-3 minutes for medium or 3-4 minutes for well done.

4 Steam the spinach until just wilted, and drain. Divide everything between 4 plates (discarding the thyme) and serve scattered with the extra parsley.
