SW recipe: FIRECRACKER BEEF STIR-FRY

Serves 4/ Free/ Ready in 25 minutes

Ingredients:

4 tbsp dark soy sauce

2 garlic cloves, crushed

5cm-piece fresh root ginger, peeled and coarsely grated

2 red chillies, finely sliced

2 limes

1 level tsp sweetener granules

Low-calorie cooking spray

400g lean beef frying steak, visible fat removed, cut into strips

250g dried medium egg noodles

600g stir-fry vegetable mix

Method:

1 Make the sauce by mixing together the soy, garlic, ginger, chillies, the juice of 1 lime and the sweetener. Set aside.

2 Spray a large, non-stick wok or deep frying pan with low-calorie cooking spray and place over a medium-high heat. Once hot, add the beef and fry for 2 minutes until browned. Transfer to a plate and set aside.

3 Cook the noodles according to the pack instructions. Meanwhile, return the pan to a medium-high heat and spray with low-calorie cooking spray. Once hot, stir-fry the veg mix for 5-6 minutes until softened and coloured. Pour in three-quarters of the sauce, return the beef to the pan and stir-fry for a further 1-2 minutes, or until the beef is cooked through, and the veg are tender and well coated in the sauce.

4 Slice the remaining lime into wedges. Drain the noodles, then divide between 4 bowls with the beef stir-fry. Drizzle over the remaining sauce and serve with the lime wedges for squeezing over.
