SW recipe: Fish burgers & chips with tartare sauce

EVERYDAY EASY
Serves 4

Ready in 1 hour

400g skinless and boneless cod fillets, cut into large pieces
400g raw peeled large prawns
1 tsp dark soy sauce
2 garlic cloves, finely chopped
1 tsp finely grated fresh root ginger
1 red chilli, deseeded and finely chopped
10g fresh dill, finely chopped
10g fresh flat-leaf parsley, leaves finely chopped
1 small egg white, lightly beaten
4 x 60g wholemeal rolls, halved
1 beef tomato, sliced
4 little gem lettuce leaves
Lettuce, tomato, red onion and cucumber salad, to serve

For the chips:
700g floury potatoes, such as Maris Piper or King Edward, peeled and cut into chips
Frylight

For the tartare sauce:
4 level tbsp extra-light mayonnaise
4 tbsp fat-free natural fromage frais
2 gherkins, finely chopped
4cm-piece cucumber, finely chopped
1 tbsp lemon juice

1 Preheat your oven to 200°C/fan 180°C/gas 6. Put the cod, prawns, soy sauce, garlic, ginger, chilli, herbs and egg white in a food processor and whizz together. Shape the mixture into 4 burgers. Place on a non-stick baking tray and chill.

2 Spread the chips on a large, non-stick baking tray in a single layer and spray with Frylight. Season and bake for 40 minutes, or until golden, turning halfway. Meanwhile, spray the burgers with Frylight. Add to the oven on the shelf below the chips and cook for the final 20-25 minutes of their cooking time, or until cooked through and golden.

3 To make the tartare sauce, mix together all the ingredients. Fill each roll with tomato, lettuce and a burger. Serve 1 per person with the chips, salad and tartare sauce.
