SW recipe: Fish burgers with tartare sauce

For the burgers:

6 spring onions

A few fresh dill sprigs, plus 1 tbsp chopped dill for the sauce and extra to serve

250g skinless and boneless salmon fillets, cut into large chunks

250g skinless and boneless white fish fillets, cut into large chunks

Low-calorie cooking spray

Crushed pink peppercorns, to garnish (optional)

Salad, to serve

For the tartare sauce:

200g fat-free natural fromage frais

6 gherkins, drained and finely chopped

2 tbsp capers, drained and finely chopped

½ small pack fresh parsley, finely chopped

A squeeze of lemon juice, plus wedges to serve


1. Put the spring onions, dill sprigs and fish into a food processor, season and pulse until roughly minced (take care not to over-process the fish or it will turn into mush). Divide mixture into four portions, shape into burgers and chill for 30 minutes.

2. Meanwhile, put the tartare sauce ingredients in a bowl with 1 tbsp chopped dill, season and mix well. Cover and chill until needed.

3. Light the barbecue for direct medium heat. Spray a non-stick grill pan or baking sheet with low-calorie cooking spray, add burgers and spray again. Put the pan or baking sheet on the barbecue and cook for 10 minutes or until cooked through, turning once. Or, cook burgers under a high grill for 10-12 minutes.

4. Pile the burgers onto a plate, scatter over the extra dill and garnish with a few pink peppercorns, if you like. Serve with tartare sauce, lemon wedges and salad.
