SW recipe: Fish ’n’ spicy chips with pea guacamole

A sparky side makes this simple classic even more must-eat

SIMPLE

Serves4

Ready in about 50 minutes

Ingredients:

2 large eggs

Salt and freshly ground black pepper

4 thick, skinless white fish fillets (such as haddock, pollock or cod)

50g cornflakes, whizzed in a food processor to make crumbs

800g floury potatoes, such as Desiree or King Edward, peeled and cut into chunky chips

Low-calorie cooking spray

1 tsp each of mild chilli powder and ground cumin

450g frozen peas, defrosted

100g fat-free natural yogurt

2 limes, 1 juiced, 1 cut into wedges

½ small pack fresh coriander, leaves roughly chopped

½ red onion, finely chopped

1 red chilli, deseeded and finely chopped

Method:

1 Preheat your oven to 200°C/fan 180°C/gas 6. Beat the eggs with a little salt and freshly ground black pepper and transfer to a shallow dish. Put the cornflakes in a food processor, whizz into crumbs and transfer to another shallow dish.

2 Dip each fish fillet into the egg, then into the cornflake crumbs to coat the tops evenly. Chill for 10 minutes.

3 Meanwhile, gently toss the chips with the spices and season. Spread on a non-stick baking tray in a single layer and spray with Frylight. Bake for 20 minutes, turn over, then put the fish on another non-stick baking tray and add to the oven. Cook everything for 15 minutes.

4 Put half the peas in a food processor with the yogurt and lime juice. Whizz until fairly smooth, then tip into a bowl. Add the remaining peas and crush using a potato masher, leaving the mixture slightly chunky. Season, then stir in the coriander, onion and chilli.

5 Divide everything between 4 plates and serve with lime wedges for squeezing over.
