Five-spice turkey stir-fry
SUPER SIMPLE
Serves 4 Ready in about 30 minutes

Ingredients:

200g dried egg noodles

Low-calorie cooking spray

500g turkey breast steaks, thinly sliced

2 red peppers, deseeded and thinly sliced

100g mangetout, thinly sliced

200g thin-stemmed broccoli, sliced

8 spring onions, sliced diagonally into short lengths

2 garlic cloves, sliced

2 tbsp Chinese five-spice powder

1 level tbsp cornflour

2 tbsp light soy sauce

1 red chilli, deseeded and finely chopped, to serve (optional)

Method:

1 Cook the noodles according to the pack instructions. Drain and set aside.

2 Spray a large, non-stick frying pan or wok with low-calorie cooking spray and place over a high heat. Add the turkey and stir-fry for 4-5 minutes until lightly browned. Add the vegetables, garlic and five-spice powder and stir-fry for 3-4 minutes.

3 Mix together the cornflour. soy sauce and 200m1 water until smooth. Add to the pan, then bring to the boil and stir in the cooked noodles. Toss to combine and cook for 2-3 minutes, or until piping hot. Divide between 4 bowls and scatter over the chilli, if you like.
