Ingredients:
Low-calorie cooking spray
6 onions, thinly sliced
1 garlic clove, thinly sliced
A small handful of fresh thyme leaves, plus a few whole sprigs to garnish
900ml vegetable stock
2 tbsp balsamic vinegar
Salt and freshly ground black pepper
2 slices of wholemeal bread from a small 400g loaf
30g Gruyere cheese (or vegetarian alternative), finely grated
Method:
1 Place a wide. heavy-based pan sprayed with low-calorie cooking spray over a low heat. Add the onions and garlic and fry very gently for 30-35 minutes, or until golden brown. Stir well, then add the thyme leaves. stock and vinegar. Bring to the boil. simmer for 10-15 minutes and season.
2 Preheat your grill to high. Lightly toast the bread on both sides. Cut each slice of toast in half diagonally. sprinkle over the Gruyere and grill for 2-3 minutes. or until the cheese has melted and is bubbling
3 Ladle the soup into bowls and top each with a cheesy toast half Scatter with the thyme sprigs and serve immediately
